Easy Ham & Potato Frittata Recipe

Looking for a hearty egg dish for breakfast or brunch? This Easy Ham and Potato Frittata is the perfect way to use up leftover cooked potatoes (from a Sunday roast, maybe? Or leftover baked potatoes?) and ham. It goes together quickly, and is good hot or at room temperature.

This easy frittata is also a great way to use up leftover vegetables – just add them to the skillet before pouring the egg mixture over. You can vary the cheese, depending what you have around, and substitute green onions for the chives.

1/4 cup butter, divided
1 to 2 cups sliced cooked potatoes
salt and freshly ground black pepper
1 large onion, halved and sliced
1/2 pound lean ham, cut into small dice
8 large eggs
1/4 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper, or more to taste
1 1/2 cups grated sharp cheddar cheese
2 tablespoons chopped chives
Topping, (optional)
1/2 cup sour cream
2 tablespoons chopped fresh chives, or 2 teaspoon dried chives

- Preheat oven to 350°.
- Melt 2 tablespoons of the butter in a 12" non-stick skillet. Add the potato slices, and brown, adding a little salt and pepper.
- Remove the potatoes from the skillet and add the remaining 2 tablespoons butter; add the onions and let them cook, stirring often, until they are golden and caramelized.
- Stir the browned potatoes and ham cubes into the mixture and spread evenly in the pan.
- Place the eggs, heavy cream, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a blender; whizz on low speed (to eliminate too many bubbles) until blended. Pour over the potato/onion/ham mixture in the skillet. Let cook 2-3 minutes or until the egg mixture is set around the edges.
- Sprinkle with the cheese and chives and place in the oven. Let the frittata cook until set in the middle, 20-30 minutes. Remove from the oven, let sit 10 minutes, then cut into wedges and serve.
- Optional topping: Stir together the sour cream and chives; place a dollop on the top of each frittata wedges.
