Fresh Berry Icebox Cake Recipe

Icebox cakes have been served for decades. They usually consist of cookies layered with a creamy mixture, sometimes containing fruit or other ingredients. The following Old Fashioned Berry Ice Box Cake is quick and easy to put together, and takes advantage of your favorite fresh berries.

This Icebox Cake can be chilled or frozen, and is good both ways. You can make it way ahead and freeze it. You can also use your favorite berries, or whatever you happen to have access to.

2 cups heavy whipping cream
1 8 oz. package softened cream cheese
1 1/4 cups berry jam or preserves, (10 ounce jar), I use Razzzleberry
12 ounces fresh berries, such as blueberries, raspberries, blackberries, strawberries
18 graham crackers, (2 sleeves - about 6 ounces)

2 cups heavy whipping cream
1 8 oz. package softened cream cheese
1 1/4 cups berry jam or preserves, (10 ounce jar), I use Razzzleberry
12 ounces fresh berries, such as blueberries, raspberries, blackberries, strawberries
18 graham crackers, (2 sleeves - about 6 ounces)
- Whip the whipping cream until stiff peaks form.
- In a separate bowl, whip the cream cheese until fluffy and smooth. Turn the mixer to low speed and mix in the jam. Fold in half of the whipped cream and 10 ounces of the fresh berries (you'll use the remaining for garnish).
- Place 6 graham crackers on the bottom of the prepared baking dish, breaking them if necessary to cover the bottom. Spread 1/3 of the berry mixture over the layer of graham crackers. Add another layer of graham crackers; spread half of the mixture over the graham crackers, then add a third layer of graham crackers and top with the remaining berry mixture. Spread the remaining whipped cream over all. Sprinkle with the reserved berries and cover with plastic wrap.
- Refrigerate overnight before cutting into squares to serve, or, if you prefer, you can also freeze this and serve it frozen.
